Semolina porridge

About the Recipe

Fuel your morning with this delicious bowl of semolina and berries.

Ingredients

  1. 2 cups fine semolina flour

  2. 4 cups of milk of choice

  3. 1-2 tsp cinnamon

  4. 1 tbsp vanilla extract

  5. dash of fine salt

  6. 1/4 cup granulated sugar or sweetener of choice (may impact colour)

  7. 1 cup berries of choice (frozen or fresh)

  8. 1 tbsp granulated sugar or sweetener of choice

  9. 1 tbsp chia seeds

  10. Splash of water

  11. Toppings of choice

Preparation

To cook the semolina:

  1. Add 3 1/2 cups of water to medium pot on stovetop, along with sugar

  2. Stir on medium heat until starts to boil

  3. Add semolina flour and keep stirring until all dissolved on low heat

  4. Add vanilla extract, salt, cinnamon and stir until all combined

  5. If appears very dry, add more of the milk or water and let cook on low for a few mins then cut heat off

  6. Let the mixture sit in the pot for a few mins to absorb all the liquid. Prep berry sauce meanwhile


To make the sauce:

  1. Add berries to a small pot on medium heat along with splash of water, sugar and chia seeds

  2. Stir until berries start soften and sauce formed, for a few mins

  3. Cut the heat off once desired consistency reached. You don't need to cook this more than a few mins so the sauce gets to keep some of the berry consistency (unless going for an ultra soft texture)

  4. Serve the semolina porridge with the sauce on top. You can add more milk or choice of liquid to the porridge to make looser if desired. Top with some flax or other seed or nut and/or granola for an added crunch
