Beautiful, bright and nutrient rich chia seed pudding.
Ingredients
1/4 cup mashed ube potato
1cup nut milk
2 tbsp maple syrup
1/2 tsp cinnamon
1/2 tsp vanilla extract
2 tbsp chia seeds
Preparation
Add ingredients to a jar. Mix and refrigerate overnight or 7-8 hours.
Top with fresh or frozen fruit, yogurt, granola, seeds and/or nuts.
