Almond meal pancakes: Fluffy and scrumptious!

Ingredients

1. 2 cups almond meal (or flour)

2. 1 1/3 cup all purpose flour 

3. 4 eggs

4. 1 cup milk w/ 1 tbsp vinegar (or buttermilk)

5. 1 tbsp vanilla extract 

6. 1/2 cup vegetable oil

7. 1/3 cup granulated sugar

8. 3-4 tbsp maple syrup

9. 1/2 tsp cinnamon 

10. 1/2 tsp baking soda

11. 1 tsp baking powder

12. Dash of salt

13. Handful chocolate chips

Preparation

1. Add ingredients minus chocolate chips to a large bowl. Mix well

2. Fold in chocolate chips

3. Scoop batter into greased hot pan or plate (1/4 c portions)

4. Fry for a 5 mins on each side (or til they're bubbly and brownish)

5. Layer with 1 tsp butter or coconut oil in between

6. Top with syrup and/or powdered sugar and fresh fruit
