Delicious flavors of fall in a tiny baked dish!
Ingredients
For the fruit and veggie mixture:
1 bosc pear
1-2 honeycrips apples
1 small pumpkin or other fruit veg like sweet potato, squash, etc.
1 cinnamon stick
Cinnamon powder (optional)
For the crumble:
1 cup oats
1/2 coconut or almond flour
1/2 cup crushed pecans
2-3 tbsp coconut oil
2 tbsp cashew butter, or other
2 tsp cinnamon powder
1/2 cup sweetener of choice
Preparation
Steam the fruit and veggie mix:
Wash and slice the fruit/veg either into quarters or halves.
Bring a large pot with 1 cinnamon stick, to boil.
Add the fruit/veg mix and let boil until softened, about 20-30 mins.
Turn heat off. Remove cinnamon stick. Drain but reserve just a bit of the water when done, and set the fruit/veg mixture aside.
For the crumble:
Mix the crumble ingredients in a bowl while oven preheating at 375 F.
Pack mixture into base of a pan or baking dish.
Place in oven and bake for 10 mins.
Top the crumble with the delicious fruit and veggie mix. Serve with cream, yogurt or ice cream.
