Chocolate espresso truffles (energy balls)

About the Recipe

Chocolate coffee truffles (energy balls): A fabulous brekkie treat!


  1. 1/2 cup almond meal or flour

  2. 2 tbsp cocoa powder + 1 more tbsp to dust

  3. 2 tbsp oat fiber or flour

  4. 2 1/2 tbsp coconut oil (melted)

  5. 1 tsp vanilla extract

  6. 1/4 tsp salt

  7. 2 tbsp espresso or dissolved instant coffee

  8. 1/4 cup quinoa puffs or crushed nuts

  9. 1/2 cup mini chocolate chips


  1. Mix cocoa powder (minus 1 tbsp), coconut oil, salt, espresso, oat fiber, almond meal and vanilla extract in a bowl.

  2. Once incorporated, fold in quinoa puffs and chocolate chips.

  3. Scoop out mixture with ice cream scoop or measuring spoon and shape into a ball. You might need to wet your hands slightly to shape.

  4. Dust energy balls with more cocoa powder.

  5. Refrigerate.
