Split peas with hearts of palm salad


  1. 1 cup split peas, cooked to pack instructions

  2. 1/2 can palmito / hearts of palm (sliced)

  3. 1/2 red onion, chopped

  4. 1 tomato, chopped

  5. Green pepper, chopped

  6. Handful of spinach leaves

  7. 2 Tbsp olive oil (halved)

  8. Juice of 1 lemon (halved)

  9. Salt and pepper (and other seasoning) to taste


  1. Drain the peas once cooked and toss with 1 tbsp olive oil and half of the lemon juice

  2. Add ingredients to a plate or bowl and toss with remaining olive oil, lemon juice, salt and pepper
