Split peas with hearts of palm salad
Ingredients
1 cup split peas, cooked to pack instructions
1/2 can palmito / hearts of palm (sliced)
1/2 red onion, chopped
1 tomato, chopped
Green pepper, chopped
Handful of spinach leaves
2 Tbsp olive oil (halved)
Juice of 1 lemon (halved)
Salt and pepper (and other seasoning) to taste
Preparation
Drain the peas once cooked and toss with 1 tbsp olive oil and half of the lemon juice
Add ingredients to a plate or bowl and toss with remaining olive oil, lemon juice, salt and pepper
