Peach and tomato tart

About the Recipe

Summery, crispy and delicious tart!


  1. 15 oz pack of puff pastry (store bought in our case - preferably cold but spreadable such that doesn't break apart)

  2. 1 pack (5.2oz) Boursin cheese or other cheese of choice. We use Boursin garlic and fine herbs.

  3. AP flour to aid in pastry kneading

  4. 1 heirloom tomato, sliced

  5. 1 large white peach, sliced

  6. A drizzle of olive oil

  7. Herbs of choice (fresh or dried)

  8. Salt and pepper


  1. Preheat oven to temperature* indicated on pastry pack

  2. Flatten out the pastry dough to desired thickness on a clean floured surface

  3. Spread dough on parchment paper lined baking tray

  4. Make some holes in dough base with fork before spreading cheese on top

  5. Spread out slices of tomato and peach

  6. Drizzle with olive oil and/or honey

  7. Sprinkle some salt and pepper

  8. Place in oven and let bake for duration indicated on pack

*We find a high temp (around 425F) is a good option. The pasrty will bake for about 40 mins and you may need to cover with foil loosely at some point to reduce browning.
