About the Recipe

Flavorful Spanish tomato spiced potatoes.


  1. 2 medium potatoes

  2. 1 cup crushed tomatoes

  3. 1/2 cup chopped yellow onion

  4. 3 crushed cloves of garlic

  5. 1 tsp paprika

  6. 1/2 tsp cayenne pepper (or more for hot)

  7. Salt and black pepper to taste

  8. 1/4 cup apple cider vinegar or white cooking wine

  9. 1/2 tbsp granulated sugar

  10. 2x 2 tbsp olive oil

  11. Few parsley leaves (fresh)

For the yogurt dip/topping:

  1. 1/4 cup plain sour yogurt

  2. 2 cloves of garlic, crushed

  3. 1/4 tsp salt


Prepare and fry the potatoes:

  1. Chop the potatoes into cubes.

  2. Toss in 2 tbsp olive oil then place into air fryer basket.

  3. Fry for about 15 mins shaking halfway through. Should be cooked / slightly browned when ready.

Make the sauce:

  1. Heat 2 tbsp olive oil in small pan on stovetop.

  2. Sautee the onion followed by garlic until softened.

  3. Add crushed tomato sauce and vinegar/wine.

  4. Reduce heat to low and let simmer for about 7mins.

  5. Add sugar, seasoning and spices. Simmer for a couple more mins.

  6. Turn heat off. Optional: Use blender to make thin/runny.

  7. Throw potatoes into sauce pot or top the sauce onto the potatoes.

Make the yogurt topping:

  1. Add yourt to a small bowl.

  2. Add garlic and salt and whisk until soft and consistent.

  3. Top over potatoes when ready to serve.

  4. Top with fresh parsley.
