About the Recipe
Flavorful Spanish tomato spiced potatoes.
2 medium potatoes
1 cup crushed tomatoes
1/2 cup chopped yellow onion
3 crushed cloves of garlic
1 tsp paprika
1/2 tsp cayenne pepper (or more for hot)
Salt and black pepper to taste
1/4 cup apple cider vinegar or white cooking wine
1/2 tbsp granulated sugar
2x 2 tbsp olive oil
Few parsley leaves (fresh)
For the yogurt dip/topping:
1/4 cup plain sour yogurt
2 cloves of garlic, crushed
1/4 tsp salt
Prepare and fry the potatoes:
Chop the potatoes into cubes.
Toss in 2 tbsp olive oil then place into air fryer basket.
Fry for about 15 mins shaking halfway through. Should be cooked / slightly browned when ready.
Make the sauce:
Heat 2 tbsp olive oil in small pan on stovetop.
Sautee the onion followed by garlic until softened.
Add crushed tomato sauce and vinegar/wine.
Reduce heat to low and let simmer for about 7mins.
Add sugar, seasoning and spices. Simmer for a couple more mins.
Turn heat off. Optional: Use blender to make thin/runny.
Throw potatoes into sauce pot or top the sauce onto the potatoes.
Make the yogurt topping:
Add yourt to a small bowl.
Add garlic and salt and whisk until soft and consistent.
Top over potatoes when ready to serve.
Top with fresh parsley.
