Delicious low carb pasta with tomato basil sauce. I'd eat this everyday!
Plant-based pasta (spaghetti)
1 small yellow onion, chopped
2 cloves of garlic, minced
3-4 cherry vine tomatoes
1 cup baby bella mushrooms
Spices of choice (basil, oregano, cracked black pepper work great)
1 tbsp olive oil
1/4 tsp fine salt
Store bought jar of tomato and basil sauce
Fresh basil leaves and shredded Parmigiano Reggiano (toppings)
Cook spaghetti according to pack instructions. Drain and set aside when done.
Prepare sauce mix by sautéing garlic and onion. When fragrant, add mushrooms and let cook until softened.
Add tomatoes and cook for another couple of mins to soften.
Add store bought sauce (1.5-2 cups) and spices of choice (e.g., basil, oregano, cracked black pepper).
Top with Parmigiano Reggiano & basil leaves.
