Simple brownie recipe (using chocolate cake mix)

About the Recipe

Most delicious & easy to make choc chip brownies (hack alert!).

Ingredients

  1. 1 package chocolate cake mix (16 oz). We used gluten free Bob's Mill chocolate cake

  2. 2 eggs

  3. 1 tbsp vanilla extract

  4. 1 cup chocolate chips

  5. 1/2 cup vegetable oil


Preparation

  1. Preheat oven to 350F and line up a 8 x 8 baking tray with parchment paper

  2. Add cake mix to a large bowl followed by oil, lightly beaten eggs, and vanilla extract. Mix well.

  3. Fold chocolate chips into batter

  4. Transfer to baking tray

  5. Shake the tray back and forth a couple of times to even batter out in the tray if needed (it will be slightly thick)

  6. Bake in preheated oven for 25 mins.

  7. Let cool entirely before removing from tray to avoid it breaking

  8. Most delicious when served slightly warmed up and topped with vanilla bean ice cream

  9. We drizzle some melted chocolate on top of the ice cream for that extra YUM!
