Delicious peach pie using a store bought pie crust. Really, can't get easier than this!
Ingredients
1 store bought 9" pie crust
3- 4 medium peaches (non-ripe)
1/4 cup coconut sugar
1 tbsp corn starch or tapioca flour
1/2 tsp ground cinnamon
1/2 tsp pure vanilla extract
1 tbsp coconut oil
Preparation
Take dough out of fridge and let reach room temperature so doesn’t break as spreading it on clean and floured surface.
On a sheet of parchment paper, roll the dough into a 12″ circle. Place the parchment paper and dough on a baking sheet.
Slice peaches into 1/2″ thick slices. Place peaches in a medium bowl and sprinkle with flour, sugar, cinnamon and vanilla extract. Stir gently with a spatula just until combined.
Arrange the peaches (without juice) in circles over the dough working from the outside in, leaving about 1.5″ dough border.
Fold the edges of the galette up and over the peaches, pinching the overlapping edges together to form a nice seal.
Brush the crust with coconut oil (or a beaten egg if you choose to). Sprinkle with cinnamon and sugar. Throw on some crushed up almonds around the crust too for the added yum and nutrition.
Bake for 18-22 minutes until the crust is golden brown.
Remove from oven and let cool on cooling rack before slicing up and serving.
Pair with delicious vanilla bean ice cream!
