About the Recipe

Sweet and delicious. Apricot jam/preserves have a magical effect in this cake!


  1. 1 1/2 cups all purpose flour

  2. 3/4 cups sugar (I used coconut sugar)

  3. 2 tbsp apricot jam or preserves

  4. 1 tsp vanilla extract

  5. 1 tsp baking soda

  6. 1/2 tsp baking powder

  7. 1/3 cup neutral oil (I used coconut oil)

  8. 2/3 cup milk or liquid of choice

  9. 2 eggs or egg replacement


  1. Preheat oven to 350F.

  2. Combine ingredients in a mixing bowl. Easier to mix the dry & wet ingredients separately. Mix until well combined.

  3. Pour batter into a greased pan and bake at 350F for 30-35mins.

  4. Take a peak at around the 20 min mark and cover with foil if looks like browning much.

  5. Top with whipped cream.
