Blueberry almond muffins

About the Recipe

Delicious blueberry muffins with a nutty kick!


  1. 1 cup all purpose flour

  2. 1/2 cup almond flour

  3. 2 eggs or replacement

  4. 1/2 cup milk of choice

  5. 1 tsp vanilla extract

  6. 1/4 coconut (liquid) or vegetable oil

  7. 1 1/2 tsp baking powder

  8. a sprinkle of fine salt

  9. 3/4 cup sugar or choice (keep 1 tbsp or so aside to sprinkle on top)

  10. 1/2 cup shredded almond (keep a handful aside to sprinkle on top if prefer)

  11. 1 cup blueberries


  1. Mix wet and dry ingredients separately minus the blueberries and almonds.

  2. Combine the mixtures then fold in the blueberries and almonds.

  3. Scoop into muffin tray then sprinkle add'l almonds and sugar on top.

  4. Bake for about 30 -25 mins at 375F or until toothpick comes out dry. You may choose to cover with foil halfway through to avoid extra browning.
