About the Recipe

Simple, delicious and nutritious banana oat fiber chocolate chip muffins.

Ingredients

  1. 2 mashed bananas

  2. 1/4 cup oat fiber

  3. 1 cup all purpose flour

  4. 1/2 cup coconut sugar + 2 tbsp for topping

  5. 2 eggs

  6. 3 tbsp vanilla yogurt

  7. 1 tbsp vanilla extract

  8. 1 tsp baking powder

  9. 1/2 tsp baking soda

  10. 1/2 tsp salt

  11. 1/2 cup boiling water

  12. 1 tsp cinnamon divided (half for topping)

  13. 1/2 cup chocolate chips

Preparation

  1. Preheat oven to 350 F.

  2. Add and mix dry ingredients in a large bowl, minus 1/2 tsp cinnamon and 2 tbsp coconut sugar for topping.

  3. In another large bowl, add and whisk wet ingredients.

  4. Add dry ingredients to wet ingredients and mix well. Fold in chococolate chips.

  5. Scoop into greased muffin mold/tray. Sprinkle cinnamon and sugar on top for added crunch.

  6. Bake for 20-25 mins.
