About the Recipe
Adding two of our favorite fruits, bananas and apples (apple sauce) to this moist, chocolatey and ultra tasty oat loaf. A slice of this oat load is fluffier than the clouds! We use oats for the fiber and add an extra bit of protein with peanut butter on top, because who doesn't love some peanut butter with banana and chocolate!
Ingredients
2 ripe bananas
1/2 cup apple sauce
5 tbsp melted butter
1 cup milk of choice
1 tsp vanilla extracted
2 eggs
2 cup old fashioned oats (divided)
1/2 cup sugar (brown, coconut, table or powder) and an extra 1 tbsp to sprinkle on top (optional)
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon and more to sprinkle on top
1/3 cup cocoa powder
1 cup chocolate chunks
Baking oil spray
1-2 tbsp peanut butter (to top, optional)
Preparation
Preheat oven to 375F.
Use two mixing bowls for this recipe. In the first bowlm mash the bananas, add in eggs, melted butter, vanilla, milk and apple sauce and blend with a mixer until well combined.
Add in 1.5 cup oats, sugar, and powders excluding cocoa. Mix again until combined.
Pour half the batter into the second bowl and mix in the cocoa.
Add 1/4 cup oats to vanilla batter and mix until combined. If still runny, add another few tbsp up to 1/4 cup. Combine well.
Fold chocolate chunks into vanilla batter.
Spray parchment paper lined loaf pan with baking oil then pour the two batters into the tray, alternating between the vanilla and chocolate mixtures. Use a knife or fork to swirl the mixtures.
Top with a few dollops of peanut butter and swirl that in as well. Optional: top with brown/coconut sugar and some extra cinnamon.
Place batter in and set timer to 20 mins. May need to bake for full 25 mins. Check if batter is dry before removing.
Let cool down before transferring from pan and cutting up and enjoying.
