About the Recipe
Delicious peach and almond scones for your summer mornings!
1 peach (I used white), sliced/cubed (about 1 cup)
1 1/2 cups all-purpose flour
1/2 cup almond flour
1/2 cup dark sugar such as coconut, brown or turbinado
1/4-1/2 tsp spice mix such as cinnamon, nutmeg, cardamom
Dash of salt
1 tbsp baking powder
3 tbsp tahini paste
1 tbsp vanilla extract
1 cup almond milk
Optional: 1 tbsp peach or apricot jam
Handful of sliced almonds and more to sprinkle on top
Sugar of choice to sprinkle on top
Stir dry ingredients then add wet ingredients (minus any toppings), fold until mixed but don't over mix/knead. Batter will be very sticky.
Drop cake mixture in the centre of parchment paper lined baking sheet then shape into a circle and flatten the top a little (alternatively, use other choice of baking pan/tray such as loaf).
Sprinkle with sugar and more almond slices.
Bake in pre-heated oven (400 F) for about 35 mins covering with foil loosely around midway to reduce browning.
Once cooled down, slice and serve with your fav yogurt, ice cream, cream, jam, etc. You can also drizzle sugar icing on top.
