Almond flour maple cookies: vanilla poppy seed & cocoa

About the Recipe

Gluten free and dairy free almond flour based shortbread cookies.

Ingredients

Vanilla poppy seed cookies

  1. 1 cup blanched almond flour

  2. 2 tbsp coconut oil

  3. 2 tbsp maple syrup

  4. 1 tsp poppy seeds

  5. 2 tsp vanilla extract

Cocoa cookies

  1. 1 cup blanched almond flour

  2. 4 tsp cocoa powder

  3. 2 1/2 tbsp coconut oil

  4. 3-4 tbsp maple syrup

  5. tsp vanilla extract


Preparation

  1. Preheat oven at 350 F

  2. Line baking tray with parchment paper

  3. Mix ingredients in separate bowls if making both flavors

  4. Cookie dough consistency needs to be sticky enough not to crumble. Suggest adding the coconut oil and maple syrup 1 tbsp at a time until consistency seems right. You can always add a splash of water if seems dry to get the dough to roll so you can cut into shapes but that might not be necessary

  5. Roll cookie dough onto clean non-stick or floured surface and cut out shapes as desired

  6. Transfer cut-out cookies onto baking tray and bake for no more than 7-8 mins

  7. Remove from oven and wait to cool down entirely before dipping or topping with chocolate or icing
